Spinach and Mushroom Stromboli



Stromboli is an American-Italian turnover. This is my version of stromboli and loved by my family. Its super healthy and filling. Can be served at breakfast or as a one meal dish. The covering is made with homemade multigrain flour (my version has whole wheat flour, millet flour and gram flour) and flaxseed powder. You can try your version of stromboli and share the recipe with us.


Ingredients


1 1/2 cup Whole wheat Flour
1/2 cup Finger Millet Flour (Ragi)
1/4 cup Gram Flour
2 tbsp oil
3/4 tbsp instant dry yeast
3/4 tsp salt
1 tbsp butter
1 tbsp Flax seed powder
250 ml water

Stuffing:
1 1/2 cup tightly packed finely chopped spinach
1 cup sliced mushrooms
100 gms crushed cottage cheese
1 tbsp crushed garlic
1/2 cup finely chopped onion
1/2 cup grated cheese (optional)
1/2 tsp salt
1/4 tsp pepper
1/2 tsp mixed herbs
1 tbsp oil

Method:
Stuffing

  • Heat a pan on medium heat. Heat oil.
  • Add crushed garlic and saute for a minute. 
  • Add the chopped onions. Cover and cook till translucent.
  • Add chopped spinach and mushroom. Cook for 3-4 minutes on low flame till it leaves water. Again cook on high flame till most of the liquid in the stuffing has evaporated. 
  • Turn the flame low. Add crushed cottage cheese, salt and spices and cook for 2-3 minutes.
  • Cool the mixture and add grated cheese.
Covering

  • Add 3 tbsp of water to 1 tbsp of flaxseed. Set it aside for 10 minutes.

  • Mix all the dry ingredients.


  • Add flax seed solution to the flour mixture. Add water in parts and knead it into a dough. This dough is sticky.                          


  • Dust the counter with dry flour. Apply oil to your hands and knead the dough for about 8-10 minutes till it turns non sticky and elastic. 
  • Coat a bowl with oil and place the dough in it. Coat the dough with oil.
  • Let it rest for 10 minutes. The dough will rise a little.
  • Preheat the oven at 200 degrees Celsius. 
  • Dust the counter with dry flour and roll the dough into a rectangle. 
  • Spread the filling over the rolled dough.
  • Roll it into a cylindrical jelly roll type. 
  • Shape it into a ring and cut the sides as shown in the picture below.
  • Bake it at 200 degrees Celsius for 40-45 minutes till golden brown. 
  • Brush butter to the crust and enjoy the warm crispy and cheesy stromboli.
