Stuffed Buns

Satisfy your craving for unhealthy roadside vada pav or unhealthy burgers from the McDonalds by making your own healthy stuffed buns at home! The only way you can be assured that the food that you fancy is hygienic, clean, free from all the preservatives and also loaded with flavours of your choice is to make it at home. So here I have a recipe thoroughly enjoyed by my family. 
I have used potato stuffing, but you can be creative by making your own vegetarian or non-vegetarian stuffings. 

Ingredients

Covering

2 2/3 cups Whole Wheat Flour
1 1/2 tsp Active dry yeast
1 tsp Honey
1 tsp Salt
1 tbsp Flax seed powder
1 tsp Garlic powder
1/2 tsp Carom powder
1/2 cup finely chopped coriander leaves
1/8th cup milk
1 tbsp Sesame seeds
1 tbsp butter
150 ml Water

Stuffing


4-5 medium Potatoes
1 tbsp Ginger Garlic paste
1 medium Onion
1/4 tsp Mustard seeds
1 tbsp Oil
Salt as per taste
Chilli paste as per taste

Method


Let's start with making the dough for the bun i.e the covering. So while the dough is rising, we can make our stuffing, cool it and shape it.

Covering:


  • Mix flax seed powder and three table spoons of water. Keep aside for 5-10 minutes to form a gel like consistency.
  • Bloom the yeast using 1/4th cup of warm water and honey.
  • Mix all the dry ingredients in a large bowl.
  • Make a well and add flax seed mixture and yeast mixture.
  • Slowly adding water to the above mixture knead it into a dough. The dough would be sticky at this time.
  • Add oil and knead the dough for 10-12 minutes to form a non sticky dough.
  • Place this boule of  dough in a greased bowl for the first rise. 
  • Coat it with oil and cover it with a cling film. 
  • Set it aside for at least 40 mins or till the dough doubles in volume.

Stuffing:

  • Heat oil in a pan. Add mustard and cumin seeds and let them sputter.
  • Add turmeric powder, curry leaves, green chillies and ginger garlic paste.
  • Add diced onions and fry them till translucent.
  • Add chopped boiled potatoes and mix. 
  • Sprinkle salt, sugar, coriander powder and mix well.
  • Mash the whole mixture till lumps are removed. Cook for another 2-3 minutes with the lid on.
  • Remove from heat. Let the mixture cool.
  • Once the mixture cools down, make equal round balls or patties.

Buns:

  • Once the dough has doubled, knock back gently and knead the dough for 5-6 minutes.
  • Divide the dough into 8 equal portions.
  • Take a portion and roll it into a circle.
  • Place a ball of stuffing in the centre of the flattened dough.

  • Start folding the dough to cover the stuffing from all sides


  • Turn the seam side down and shape it into a flat ball
  • Score the top to vent out the heat while baking
  • Brush the top with milk. You can garnish the top with sesame seeds.
  • Bake for 30 minutes in the middle rack or till the buns turn golden brown.




  • Remove it from the oven an apply a coat of butter while still hot to keep the top soft.
