Iyengar Style Khara Buns

After meeting my Bangalore gang, I am always excited to bake. They have always encouraged me to take a leap of faith. This one is dedicated to the Gang! Khara Buns or Khara Bread, a famous delicacy from the Iyengar bakeries in Bangalore. It is one of the nutritious breads. An attempt to get your family to eat dill happily and increase the health factor using whole wheat flour I have a chemical free recipe for all. 

Ingredients

2 cups Whole Wheat Flour
1 cup All purpose flour
1 1/2 tsp fresh yeast
1 tsp Honey
1 tsp Salt
1/2 cup milk, additional 1/8th cup of milk for brushing
1 1/2 cup of warm water
2 tbsp oil
1 tbsp butter

Khara Masala


1 cup loosely packed finely chopped coriander leaves
1 cup loosely packed finely chopped dill leaves
1 cup finely chopped onion
finely chopped green chillies as per your taste
1/2 tsp salt
1/2 tsp mustard seeds
1/2 tsp turmeric powder
1 tbsp oil

Method


Khara Masala

  • Make a tempering with oil, mustard seeds, green chillies and haldi. 
  • Add chopped onions and saute till transparent.
  • Add coriander and dill leaves and saute till cooked. Add a pinch of salt and cook for couple of minutes.

Buns

  • Bloom the yeast using 1/4th cup of warm water and honey.
  • Mix all purpose flour, whole wheat flour, salt.
  • Make a well in the above mixture and add yeast mixture to it.
  • Adding milk and water knead it into a dough. Initially it will look sticky as in the picture below.

  • Dust the surface you want to use for kneading. 
  • Adding a little oil to the dough. Knead the dough for 5 minutes.
  • Add the Khara masala to the dough and continue kneading for another 5-7 minutes till the dough is no longer sticky.
  • Shape it into a boule and place it into a greased bowl with the seam side down. Apply a coat of oil to the dough and cover it. Let it rest for 30 minutes or till the dough doubles in volume.




  • Once the dough doubles in size, punch back and deflate the dough. 
  • Now gently knead it for 4-5 minutes.
  • Divide the dough into equal parts and shape them into boules.
  • Place these bowls into a greased baking tray 2 inches apart. 




  •  Apply a coat of milk and let them raise for 20 minutes or again till they double in size. 
  • Preheat the oven at 200 degrees Celsius. 
  • Bake the above buns for 30 minutes.
